Spicy Fried Flower Conch

Washing the snails: I use frozen snails. After thawing the snails in cold water, rub the snails in the water with both hands. After repeated several times, many impurities will appear on the water. At this time, remove the snails from the basin by hand, put them in another basin, and continue to add water to scrub. There will be some fine mud and mucus on the head of the flower snail, so that it can be cleaned. Rinsing is not acceptable.

Put the washed snails in cold water, heat it to a boil on a low heat, and then heat for about ten seconds to remove the snails.

Drain the water and set aside for later use.

Heat oil in a pan, sauté the chopped green onion and garlic, add the chopped chili and ginger and stir fry a few times.

Pour the snails into the pot, add salt, beer, and white pepper, and stir fry quickly over medium heat.

Stir fry for about ten seconds and serve.
Tips:
Don't blanch it for too long, lest the meat becomes hard and shrinks and you can't eat it.
