Golden threads are a species of Nemipterus in the Nemipteridae family of Perciformes. The body is oval, slightly elongated, flat on the side, up to 35 cm long, and is covered with small comb scales. Distributed in the Western Pacific region, including Japan, South Korea, China, the Philippines, Indonesia, Vietnam, Thailand, Australia and other waters, China is produced in the South China Sea, the East China Sea and the southern part of the Yellow Sea. The South China Sea produces more.

Golden thread fish has tender meat, fine spines and soft scales, rich nutrients and delicious taste. Most of the products in the market are frozen products, and the spicy flavor of Sichuan can cover some of the fishy smell. It just so happens that there is also the hot and spicy pot ingredients of Koke Yibai at home.

Spicy paste is a cooking method often used in Sichuan cuisine. The cooked dishes are bright red, rough and atmospheric, mild in spiciness, sweet and sour, and spicy and fragrant.

Spicy Golden Thread

1. Prepare materials. Remove old roots of soybean sprouts, wash and cut small celery. Wash the golden threads. Put the sesame sauce, ribs sauce, peanut butter, oyster sauce, and sesame oil into a bowl, add a little cold water, and make a sauce.

2. Boil water in a pot, blanch the bean sprouts and celery, and place them on the bottom of the plate.

3. Golden threads are patted with starch. Boil the oil pan to 6-7 percent hot, add golden threads

4. Fry until golden brown, remove the oil control.

5. In another oil pan, heat to 40% heat, add 10 grams of dried chili, 5 grams of pepper, minced ginger, green onion, and minced garlic and sauté until fragrant.

6. Add the pre-prepared sauce and stir well.

7. Pour in the fried golden threads, low heat, and mix well.

8. Pour in salt, chicken powder, cooking wine, sugar and vinegar and stir well

9. Use water starch to thicken the juice.

10. Pour the golden threads on the bean sprouts and celery.

11. In a separate pot, put in more oil than usual for cooking, heat over medium heat to 50% hot, pour in the remaining dried chili and Chinese pepper, stir fry for a fragrance, pour it on the golden thread and sprinkle with chopped green onion.

Tips:

1. Golden thread fish can also be replaced with beef slices or pork slices.
