Spicy Peanut Cookies
1.
Weigh the required materials, soften the butter in advance (non-liquid, poke your fingers without pressure), sift the low-gluten flour, and beat the egg liquid evenly with chopsticks;
2.
Put the spicy peanuts into a grinding cup or a food processor and break them for later use;
3.
Pour the powdered sugar into the softened butter and mix it evenly. You can also use a whisk to mix it slightly when whisking; (to prevent splashing when whisking)
4.
Use an electric whisk at low speed and then at medium high speed until the volume is enlarged and the color becomes lighter. Then add the egg liquid in 3 times, each time it is fully whisked, then add the next time, and it will be feathered;
5.
Pour crushed peanuts and sifted low-gluten flour into the bowl; (the sieved flour is to effectively remove the agglomeration in the flour, making the flour more fluffy and delicate, and mixing more evenly;)
6.
Stir it evenly with a spatula, then knead it into a ball by hand, arrange it into a column with plastic wrap or greased paper, and put it in the refrigerator to freeze;
7.
Put the dough in the refrigerator and freeze it until it is slightly hard and not easy to deform, about an hour, then preheat the oven at 170 degrees, and then take it out and cut into thin slices about 5 mm thick, and place them in the baking tray, leaving a certain amount in the dough. Gap
8.
Bake in the oven for about 20 minutes until the surface is colored;
Tips:
1. To soften the butter, you can use a microwave oven, insulated water, hair dryer, etc. to speed up the butter softening, but it must be noted that if it is accidentally heated into water and oil, it can be placed in the refrigerator for a while to make it solidify before use;
2. Pay attention to the state of the mixed dough without dry powder. Do not over-mix or knead the dough to cause the dough to become gluten. The gluten of the dough will affect the taste and crispness of the finished product.
3. Note that the baking time is for reference only. Please control it according to the thickness of the dough. If you are uncertain, it is recommended to observe the coloring frequently, and do not overbake! If you like a darker color, you can bake it for a few more minutes, don't bake it black! If you are afraid that it will be dark and not crispy enough, you can turn off the oven after baking and simmer in the oven for a few minutes;
