Spicy Sauce Noodles

Dice potatoes, dried tofu and pork, marinate the diced pork with pepper for a while

Put the diced pork in hot oil and stir fry (not necessarily fully cooked)

Then heat the oil, add the potatoes, stir-fry first, then add dried tofu, and finally stir-fry the pork, mix well

Still hot oil, add ginger and garlic slices and fry to get the fragrance, add Pixian bean paste and Lao Gan Ma and stir well

Put in the stir-fried "Little Ding Dingmen", add some June fresh soy sauce and a little salt (because it is for noodle soup, it doesn't matter if it is a little salty)

Add appropriate amount of water, boil and simmer on medium heat for 15-20 minutes (take the potatoes as soft as the standard)

Add a little sugar, mix well with water chestnut powder and cold water to thicken the thick gorgon, drizzle some pepper oil and start the pan

Put the noodles into the clear soup, add the diced hot sauce and some soup, and sprinkle with chopped green onion.
Tips:
1. Pork marinated with pepper is also fishy, because it will have a little sourness when heated and fermented with cooking wine (but it can still be marinated with cooking wine~)
2. The amount of salt is good, don't be too salty! (I added 2 spoons of Pixian bean paste, 1 spoon of Lao Ganma, half a spoon of June fresh and half a spoon of salt, just the spoon for soup)
3. Don't use too much oil for stir-frying, otherwise the oil will be terrible in the end.
