Spicy Trotters

Three trotters. Let the trotters cut it. Divide a pig's trotter into two pieces, then cut into six pieces, this size is more appropriate. Wash the trotters and remove the dirty areas. In a pot under cold water, add 5 slices of ginger and 40g of cooking wine.

After the fire is boiled, remove the scum, cook for 10 minutes, and remove the scum in the middle at any time. Then rinse under the hot water pipe and control the moisture.

Prepare ingredients: 10 dried chaotian peppers, a small handful of Chinese pepper, 6 bay leaves, 2 star anises, and a handful of fennel. 3 scallions, 5 ginger slices, 1 garlic.

Add half of the water in a 24-inch cast iron pot and add the ingredients. Turn on the fire to heat up.

Prepare a tablespoon of Pixian bean paste, about 40g.

Add two spoons of oil to the wok, about 40 grams. Heat the pan with cold oil, add the bean paste and stir-fry when the oil is hot.

Then pour the pig's feet in controlled dry water and stir fry, add the onion, ginger, and garlic cloves.

Then add cooking wine and soy sauce, stir-fry evenly, and pour it into a saucepan.

Put 30 grams of water in the wok, add 9 pieces of rock sugar until the sugar becomes sugary, then add a cup of hot water along the side of the pan, and then pour it into the saucepan. Be careful when adding water because it will collapse. (You can also boil the sugar color with oil), the picture below shows the sugar color that has not been boiled yet.

Fill the pot with hot water. Use a 24 cast iron pot for 90 minutes. After half an hour, add salt. You can also add a spoonful of fermented bean curd soup. Add soy sauce as appropriate depending on the color of the soup. If you have Chuannan Brand Mala Tang at home, you can also put a spoonful.

Keep simmering throughout. Pay attention to check the amount of water, if you need to add water, be sure to heat the water. After the stew, I soaked for another night.
