Spinach Egg Yolk Pork Floss

Wash spinach leaves.

Put an appropriate amount of water in the pot and bring to a boil. Scald the spinach leaves and remove them, soak them in cold boiling water.

Remove the cold spinach and put it into the food processor, add an appropriate amount of water to mash the spinach.

Put the pureed spinach in a sieve and filter out the juice.

Mix white sugar glutinous rice flour and wheat starch, and add 80 grams of warm water to mix into a dough.

Add 10 grams of lard to the mixed dough and knead evenly.

Put the dough into a basin and spread it out.

Put an appropriate amount of water in a pot to boil, and steam the dough over water for about 20 minutes until it is fully cooked.

Take out the cooked dough, add the filtered spinach residue, put on disposable gloves and knead until the dough turns green.

Add pork floss, two spoons of salad dressing and two spoons of honey.

Divide the dough into 6 portions, (size at will) take the dough and thin, and wrap it with the pork floss filling.

Tips:
The dough after steaming. The whole process is very easy to operate with gloves. Adding two spoons of honey to the filling is to neutralize the saltiness of the egg yolk. If you don’t like salad dressing, you can change it to two spoons of oil, because the floss is relatively dry. The amount of pork floss is about 150 to 200 grams. The egg yolk can be bought with salted duck eggs and steamed to remove the yolk.
