Spinach in Soup

Prepare a songhua egg and a preserved egg.

Dice the egg, cut the ham into small slices, and prepare the ginger and garlic slices.

Wash spinach (preferably baby spinach).

Add some oil and salt to the boiling water, add the spinach to blanch, don't over blanch it.

Remove the controlled water and put it in a deep bowl.

While boiling the water to blanch the spinach, raise the pot, add oil and heat, and fry the ginger and garlic slices.

Lay preserved eggs and diced salted duck eggs and stir fry until fragrant.

Add a bowl of broth, the ribs soup I added (I didn't use thick soup or water to add chicken essence, the taste is worse).

Bring to a high heat and cook for a while until the soup becomes thick and the color of the soup is cooked on high heat.

Season with salt. Ham and salted duck eggs are both light and salty. Add less salt.

Pour the soup into a large bowl of spinach.
