Spring Seasonal Food-mango Egg White Soy Bean

Separate the egg white and the yolk (the other two egg yolks were separated when the beans were melted before).
2.
Add 3-5 drops of lemon juice to the egg white.
3.
Whisk with an electric whisk until it is solid, then put it in the refrigerator. The oven begins to preheat at 120 degrees for ten minutes.
4.
Take 30g of mango puree.
5.
Then add 12g of milk powder, the milk powder here should be used with a fat content of less than 1.5.
6.
Then add 6g cornstarch.
7.
Stir into a uniform milk paste.
8.
Pour the milk paste into the beaten egg whites.
9.
Use a spoon to stir evenly like a stir-fry.
10.
Put it in a piping bag.
11.
Squeeze the peas.
12.
Put the squeezed peas into the oven at 90 degrees for 60 minutes.
13.
When it's done, put it in a container and seal it immediately, otherwise it won't be crispy.
Tips:
1. The preheating temperature of the oven must be higher than the temperature of roasted melted beans, otherwise the melted beans will easily defoam after entering, and the roasted lines will not be so obvious.
2. After the eggs are beaten, one egg can be squeezed into two plates, so be sure to use fresh eggs, otherwise you will not be able to make beautiful mellow beans.
3. Milk powder must be selected with a fat content of less than 1.5, otherwise it will defoam and make it impossible to dissolve beans.
