Squid Pork Ribs Congee

2 dried squids, soak in clean water until soft, wash and shred, drain and set aside.

Wash the ribs and chop into small pieces, boil for 5 minutes to remove froth. Boil water in another pot (add enough water at a time), add the ribs when the water is boiled, and cook for 30 minutes.

Use the time to cook the ribs to process the squid. Use a wok or a cold pan to add oil, add the shredded squid when the oil is bubbling, stir-fry until dry, add 15ml light soy sauce, stir-fry for flavor, set aside.

Wash the rice and set aside. After cooking the ribs for 30 minutes, add the fried shredded squid and continue to cook for another 20 minutes.

Add the washed rice and continue to cook until porridge is formed, about 25 minutes. Stir it after adding the rice to prevent the rice from sticking to the pan.

After the porridge is finished, add 15ml of raw extract to taste, then add the diced shallots and chopped coriander, stir for a while and continue to cook for three minutes.

After serving, add appropriate amount of pepper according to personal taste.
