Steamed Eggs with Scallops
1.
Before starting, boil a pot of water and put down the steaming rack to prepare steamed eggs. Wash the scallops in advance, soak them in water, and beat the eggs into egg syrup. Then slowly add the water egg to water. The ratio is one part egg and one part water. Then use a sieve to separate the egg liquid once to ensure that the bubbles during beating are completely separated.
2.
Steam on the fire for about three minutes and then the game for 12 minutes. Do not open the lid in the middle.
3.
After steaming, you can sprinkle diced green onions and drizzle with soy sauce.
Tips:
Eggs and all water should be placed at room temperature first, do not use ice.
The water added to the eggs will use the water soaked in scallops to increase the umami taste.
