Steamed Fish Cake

Put the fish into the wall breaker.

Add salt, sugar, pepper, rice wine, one egg white and 80 grams of water and stir into fish paste.

The ratio of starch paste is: 40 grams of water is mixed with the same amount of water.

Add ginger powder and starch lake and stir well.

Add salt, sugar, pepper, five-spice powder, soy sauce, oyster sauce, rice wine water and egg white to the snowflake meat.

Add cornstarch to the meat after whipping.

Continue to stir into meat puree.

Put the stirred fish and pork together.

Stir well evenly. I cook a lot at a time, so separate and stir. If you make less, you can mix the pork and fish together.

Put it in a container, cover with plastic wrap and steam for 30 minutes.

Beat the two egg yolks, then pour the egg yolk liquid on the surface and continue steaming for 10 minutes.

Let cool and slice. It can be eaten directly, or it can be cooked into soup.
Tips:
1. This amount can be done more, I made 2 large pieces. If you don’t want to do so much, reduce the amount of ingredients in equal proportions.
2. Pork is usually made of pig fat, but I don't like so fat meat, so I choose middle-flake meat, which is fragrant but not greasy, which meets my personal taste. If you like fat, use fat.
