Steamed Hairy Crabs

The purchased hairy crabs are frozen in the freezer layer of the refrigerator for 30-45 minutes, and left in a semi-comatose state for cleaning. (Because the crab I bought is a live crab, there is no rope binding, so it must be cleaned when it is inconvenient to move. If you like the taste of alcohol, you can also pour some wine to make it drunk).

To clean crabs, you can use a toothbrush that you don't usually use, because its fine brush can better clean the dirt on the crab.

The most important areas to be washed are: around the crab mouth, the joints of the crab feet, and around the crab cover behind the crab claws. Gently open the cover of the crab belly button and clean it.

Invert the cleaned crabs and place them on a plate, and then put a slice of ginger on each belly. Boil water in a steamer and add 3 teaspoons of salt, 2 pieces of sesame leaves (tear into thin pieces), and when the water is boiled, add the crabs and steam for 12-15 minutes.

After the crab is steamed, take it out and set it out to taste. Because the crab is cold, you can't eat more. After eating, you can drink some rice wine or ginger tea (just put the ginger milled in water and boil it for a while and add brown sugar). There are four parts of crabs that cannot be eaten: crab gills (the strips on both sides of the crab paste), crab intestines (a long black strip in the middle of the crab navel), and crab stomach (a small black triangle in the middle of the crab lid) , Crab heart (the hexagonal thing in the middle of the crab yellow).
