Steamed Open Back Shrimp

Main and auxiliary ingredients: chilled crayfish, garlic

Use scissors to cut off the shrimp whiskers, shrimp claws, and shrimp arrow (a hard thorn on the shrimp head).

Use a knife to split the back of the shrimp, starting from under the shrimp head and ending before the shrimp tail.

Heat the pan with cold oil and add two-thirds of the garlic granules. Fry it on a small fire until it turns slightly yellow, and turn off the heat.
