The lively hairy crabs are soaked in light salt water for about half an hour

Tips:
1. Perilla buns and crab vinegar are both the condiments that come with Yangcheng Lake hairy crabs. There is no substitute for sesame leaves and old mature vinegar.
2. Be sure to re-trap the hairy crabs and then steam them on the tray to avoid falling legs.
3. Crabs are cold ingredients, so you can add more ginger.
