Stewed Bird's Nest with Rock Sugar

Prepare 4 bird's nests

Soak it in warm water, usually for 2 hours, I think it’s better for a longer time. So soak for an afternoon (about 5 hours)

Tear the bird's nest with your hands

Pour out the water, replace with new water and soak

Because there are tiny feathers on the bird's nest, I thought of this method to remove the fine hairs. Wash up the feathers with running water and let them run away

Pour the water and put the bird's nest into the stewing pot

Add the right amount of rock sugar

Add a little distilled water (you can add no water)

Boil the water and put the underlay cloth in it

Put a stew cup on the cloth to prevent the stew cup from slipping due to fluctuations in boiling water

Cover the pot and simmer for 1 hour

According to personal taste, add coconut milk (I don’t like to add coconut milk, I like the original flavor)
Tips:
1. The hair on the bird's nest is difficult to remove. You can soak it thoroughly and wash it away with running water, as shown in Figure 5.
2. The stewed bird's nest does not need water.
3. The best time to soak the bird's nest is more than 3 hours, and it is more appropriate to soak in cold water.
