The elbows are plucked and washed, soaked in clean water to remove the peculiar smell of blood.

Boil the elbows and big bones in a pot of cold water.

Shave the elbows that are blanched in water and set aside.

Put water, soy sauce, cooking wine, green onion and ginger, aniseed, a little sugar in the pot, add elbows and big stick bones to stew.

Boil on high heat instead of simmer on low heat.

Stew until the elbows are soft, add salt, and simmer for a while.

Soak the stewed knuckles in the soup pot for at least 3 hours, let cool and slice them for consumption.
