Stewed Pork Ribs with Dried Bamboo Shoots

Soak the dried bamboo shoots purchased online for 5-6 hours, and change the water 2-3 times in the middle, until you feel that there is no salty taste.

Remove the soaked dried bamboo shoots and cut them into hob sections, set aside.

Pour the dried bamboo shoots into a pan filled with water and blanch them.

Wash the fresh ribs and blanch them in a pot of clean water. Use a colander to remove any blood foam.

Remove and drain the water, set aside for later use.

Pour the ribs into our special flat-bottomed aluminum pot, add the original soup with the blood foam, add pepper, star anise, bay leaves, cloves, tangerine peel, ginger slices, add salt, cooking wine, soy sauce, and Haitian oyster sauce for stuffing stew.

Twenty minutes later, add the blanched dried bamboo shoots for a simmering stew.
8.
Turn on high heat to collect the juice and serve on a platter.
