Stewed Potatoes

Wash yacon, carrots, and potatoes, peel them and cut into small pieces for later use. Boil yacon with hot water quickly to prevent oxidation and blackening on the surface.

Put all the ingredients into the oil pan and fry until the surface is golden yellow and dry the oil for later use. Add some water to the cornstarch to make a gorgon juice for later use.

Mix the orange juice, white vinegar, and sugar and add them to the pot (without adding any oil). Slowly heat until the sugar is melted, then add the gorgon and stir to a thick state that suits you. Then add the fried ingredients and stir-fry quickly to make the ingredients evenly viscous. Serve the sauce.

All the ingredients are evenly glued to the sauce, then turn off the heat and serve.
