Stir-fried Bacon with Dried Radish

First of all, we have to prepare all the ingredients needed to make this [dried radish fried bacon]: 400g dried radish, 200g bacon, 20g spring onion, 10g ginger, 10g garlic, 10 dried chilies, and 3g sesame pepper.

Soak the dried radishes in cold water for 2 hours. After soaking, rinse and squeeze out the water for later use.

Then cut the green onion into chopped green onion, ginger into shredded ginger, garlic into garlic slices, and dried chili into chili segments for later use.

Clean the bacon and cut it into thin and even slices.

Heat a wok on medium heat until the palms are hot, then pour 10ml of peanut oil. Turn to high heat until the oil is hot. Add chopped green onion, garlic slices, ginger slices, dried chili and sesame pepper. Stir on low heat and add the cut bacon.

Add the dried radish with controlled moisture and stir-fry evenly so that the dried radish can fully absorb the fat of the bacon.

Add 1g of sugar and 5ml of light soy sauce, stir-fry evenly to taste, and then serve.
Tips:
1. Dried radish is best to be soaked in cold water, so that the taste of dried radish after soaking will be stronger. If the dried radish is soaked in hot water, it will become soft and rotten, which will affect the taste.
2. Because the bacon itself is relatively salty, soy sauce is added, so there is no need to add additional salt to taste.
3. There will be a lot of oil when you stir fry the bacon, so you don't need to put too much oil to stir-fry this dish. Try to simmer the bacon until the fat part is slightly transparent, so that the fat is simmered out and the bacon is not greasy at all.
4. If you don't like to eat bacon with a salty taste, you can also put the bacon in the pot and cook or steam it for a while, so that the saltiness will be reduced.
5. If there are green garlic sprouts and some fresh red peppers in the house, the color and taste will be better.
