Stir-fried Bacon with Winter Bamboo Shoots
1.
Wash the bacon and put it in the pot, add an appropriate amount of water, and remove the slices after cooking.
2.
Remove the roots, peel and slice the winter bamboo shoots, add a little salt and blanch them in boiling water for 2 minutes, remove and drain.
3.
Shred dried chili, shred green pepper, peel and slice garlic, and shred ginger for later use.
4.
Add proper amount of Yuhuang peanut oil to the pot, stir-fry the bacon to get the oil, add ginger, garlic, dried chili and stir-fry.
5.
Add winter bamboo shoots, green peppers and stir-fry for about 2 minutes before serving. (The bacon is salty enough, don’t add salt)
Tips:
If you don’t have bacon, you can use pork belly instead, which is just as delicious, but remember to add salt.
