Stir-fried Celery with Lamb and Shiitake Mushrooms

1. Cut the mutton, onion, ginger, garlic, dried chili, and set aside. If you don’t like mutton, you can use beef or pork.

2. Blanch celery and cut into sections, wash and slice shiitake mushrooms.

3. Put the oil in the pot, add the lamb and stir-fry the water, add the green onion, ginger, chili and pepper powder and stir fry.

4. Drizzle a tablespoon of soy sauce and stir fry for a while.

5. Pour the shiitake mushrooms and stir-fry until smooth, because the shiitake mushrooms will be very dry when they are put into the pot because they absorb oil, so the heat should not be too high.

6. Stir-fry the shiitake mushrooms smoothly and then pour it into the celery and stir-fry for a few times. The celery is blanched and there is no need to fry for too long.

7. Sprinkle salt and put garlic slices over the pot and turn off the heat.
