Stir-fried Clams
1.
Place the fresh and live clams in light salt water for an hour and let them spit out the excess sand

Prepare green onions, ginger, garlic and your favorite hot sauce
3.
Put a little edible oil in the pot and stir fry the onion, ginger and garlic to create a fragrance
4.
Add the hot sauce and continue to fry for a fragrance
5.
Add the clams and stir fry a few times
6.
Cover the lid and simmer for two minutes, just see the opening through the lid
7.
Load it up!
Tips:
There is no need to add additional water when frying the clams, as the clams will ooze out of the soup as soon as they are heated. Don't fry for too long to affect the taste. Choose a live clam when you buy it.
