Stir-fried Eggplant Strips with Tomatoes

1. Wash the eggplant.

2. Cut into strips.

3. Peel the tomatoes and cut into strips.

4. Add vegetable oil to the pot, plus some lard. Stir-fried eggplant with lard is more fragrant.

5. Add green onion and ginger until fragrant.

6. Put the eggplant strips.

7. Stir fry until the eggplant strips are soft.

8. Add tomatoes and stir fry until the tomatoes are soft.

9. Add light soy sauce and stir well.

10. Add a small bowl of water.

11. Cook until the eggplant strips are cooked through and season with salt.

12. Stir evenly out of the pot.

13. Finished product.
