Henan people like to eat noodles. The staple food is basically steamed buns and noodles. Noodles are usually eaten at noon. If you eat noodles with soup in cold weather, you can eat noodles with soup, and your hands and feet suddenly start to warm up. If it’s hot, eat noodles. Cook the noodles in cold water, pour the noodles on top, and eat with garlic. Both of these are annoying, so it's time to steam the noodles. Generally, steamed noodles will not be made every day, because steaming noodles consumes more ingredients, so you need to prepare more noodles, vegetables, and oil.

When I was young, I used to help my mother roll noodles. Every time I steamed the noodles, my mother would order more noodles, and add more eggplants, beans, tomatoes, and be willing to put oil in, otherwise the steamed noodles would look very dry. My mother often said that when steaming noodles once, the oil can be used to fry vegetables several times. I don't like soup noodles and fishing noodles, but I like steamed noodles. The steamed noodles made by my mother are soft and fragrant. I can eat it with garlic cloves. I can eat a large bowl every time.

The steamed noodles made by my mother is different from the steamed noodles that people say. It does not contain meat or pure vegetables, and the noodles do not need to be steamed in advance, but are directly spread on the vegetables and simmered, which is simple and easy! This is what we do in our hometown, and basically no meat is used.

1. Prepare the ingredients, wash the vegetables, cut the beans into sections, and cut the eggplant into large pieces. Don’t cut too small, or you won’t find the vegetables after steaming.

2. Cut tomato into pieces, cut onion and green pepper into sections, slice ginger, and smash garlic

3. Start the frying pan, add more oil, add green onion, ginger, garlic and fry until fragrant, add eggplant and beans, stir fry a few times, add salt

4. Add thirteen incense, stir well, add tomatoes, stir fry soy sauce

5. Add half a bowl of water, bring to a boil on high heat, and spread the noodles evenly on the vegetables (do not put too much water, just submerge a small portion of the vegetables)

6. Cover and simmer over medium heat. When the water is almost consumed, the pan will make a whistling sound. Open the cover, use chopsticks to stir the noodles and vegetables evenly, add the chicken essence and mix again.
