Stir-fried Kale with Shiitake Mushrooms

Soak the mushrooms in boiling water until soft, drain the water, remove the stems and cut into thin strips

Pick off the kale leaves, and gently pat the kale bones with a kitchen knife to make it easier to taste. If there are fewer kale bones, this step can be omitted.
