Tear the lotus white by hand into small pieces of moderate size, or you can cut it with a knife. It is recommended to separate the hard stems. Wash and set aside

Drain the water in the wok, add an appropriate amount of oil, fry the stems for a while, then add the leaves and peppers, stir-fry, add salt, and start the pan.
Tips:
1. You can put a little vinegar and soy sauce in the pot, similar to vinegar cabbage.
2. Since the stalks are not easy to be fully cooked, don't stir-fry them for half a minute.
