Stir-fried Mountain Pills

After peeling the yam, cut into thin slices.

Put clean water in a pot, pour the yam pill in the bubbling water, quickly blanch the water, take out the yam pill and put it in a bowl of clear water for later use.

Cut green and red peppers into sections.

Shred ginger and slice garlic.

Take a small clean bowl, pour a small amount of water, pour white vinegar in a 1:1 ratio of water and white vinegar, stir well and set aside.

Sit in a pot on the fire, add vegetable oil when the pot is hot, add red pepper segments, shredded ginger, and pepper to fragrant when the oil is hot.

Pour the green pepper slices and stir fry.

Pour in yam and garlic slices.

Then cook the vinegar sauce made with water.

Fry gently with a spatula.

Sprinkle in an appropriate amount of refined salt, stir-fry evenly, and then get out of the pot.
Tips:
1. Buy fresh yam, the kind with wet soil, and choose the ones with no trauma and more cilia. Such yams are newly dug out.
2. After buying the yam, put it in a bag and put it in the refrigerator. Otherwise, the room temperature is high and it is easy to oxidize.
3. The yam is sliced, blanched and then fried, the yam will be crispy. Yam is rich in starch, and it is easy to oxidize and turn black after peeling. You can put it in clear water in time after cutting.
4. Pay attention to wearing disposable gloves or wrap your hands with plastic paper to prevent yam mucus from sticking to your hands. If you accidentally stick the yam mucus on your skin, you can wash the itchy parts with vinegar (it is effective after my experiments).
