Stir-fried Pork Head with Pickles

1. Buy the pork head, wash and put it in the pot, put in a bowl of rice wine to get rid of fishy and boil for 10 minutes

2. Take it out and wash off the foam with cold water

3. After washing, put an appropriate amount of water and ice cubes to soak

4. Pickles pickled by my uncle in my hometown! Take it out, wash and cut into thin shreds, soak lightly

5. Thinly sliced meat soaked in ice water

6. Put the pork in the pan and stir fry to get the oil

7. Add garlic granules

8. Stir fry to get the flavor, add 2 tablespoons of cooking wine, 1 tablespoon of light soy sauce (you can't put too much light soy sauce, because you will have to stir-fry pickles later) and a little chicken essence

9. Soak the shredded pickles and squeeze out the water, soak them as lightly as possible before sautéing
