Stir-fried Potato Shreds

Scrap off the skin of the potatoes with a spoon, and wash off the green peppers.

Dice dried chili and ginger, and shred green chili.
3.
Cut the potatoes into even slices and unfold them as shown in the figure.

Shred potatoes.

Soak the cut potato shreds in clean water to remove starch.
6.
Heat the pan with cold oil, add ginger and dried chili to the pan.
7.
Turn on high heat, add potato shreds and stir continuously.
8.
Add green pepper and a little water and stir fry.
9.
When the potato shreds are almost cooked, add a spoonful of salt and stir fry evenly.
10.
Turn off the heat and add chicken essence.
Tips:
1. After the potato shreds are cut, soak them in clean water to remove the starch on the surface and prevent the pot from sticking.
2. Add a little water to the fried potato shreds to avoid sticking to the pan.
