Winter bamboo shoots are shoots developed from the side buds of Phyllostachys pubescens underground stems around the beginning of winter. Because they have not yet broken the soil, the bamboo shoots are tender and more delicious than the spring bamboo shoots. It is regarded as a "treasure in the dish" and is a very popular ingredient. On the back mountain of our hometown, there are a lot of bamboos. When I was young, during this season, I often dig winter bamboo shoots with adults. The newly dug winter bamboo shoots are very fresh and tender. They are fried with a little homemade pickled cabbage and winter bamboo shoots. The wife is so delicious, the fragrance of sauerkraut and the deliciousness of winter bamboo shoots, it is simply a feast on the tip of the tongue. "
