Stir-fried Small River Prawns with Leek

Wash and drain small river prawns.

Add cooking wine and wash again.

Put some salad oil in the pot. Add the small river prawns and fry out the excess water inside.

Continue to stir fry over low heat and add a little salt. Stir-fry until the shrimps are crispy and set aside.

Put a little more oil in the pan, add the shrimp and stir fry.

Add oyster sauce and continue to stir fry.

Top with light soy sauce and stir-fry evenly.

Add green peppers.

Add the chicken essence, add the leek segments from the pot.

Tips:
It must be crispy the first time you fry. Keep the seasoning simpler.
