Stir-fried Small River Prawns with Leek

Cut off the small river prawns, soak them in light salt water for 10 minutes, and then rinse them repeatedly to drain the water.

Clean the leeks and cut into small pieces for later use.

Mince the ginger.

Heat oil in a wok, and sauté the grated ginger on low heat.

Add the small river prawns and stir until they turn red. Add pepper and soy sauce and continue to fry.

Finally, add the leeks and stir-fry quickly.
Tips:
1. It is not advisable to fry the leeks for too long, but stir fry them quickly.
2. There is no need to put green onions in this dish, because fried leeks will conflict with green onions.
