The beef udon noodles are made with curry sauce, and some lemongrass sauce is added. Fresh lemongrass is not available. Using lemongrass sauce instead has the Southeast Asian style. The smoothness of the udon noodles makes you scream. The sound of noodle sucking is really enjoyable.

Ingredients

Stir-fried Udon with Curry Beef

1. Wash carrots, peel and cut into thin strips for later use, wash onions and cut into thick strips for later use

2. Wash snow peas to remove the ribs on both sides, cut in half with an oblique knife and set aside

3. Wash the beef and cut into thin slices, add beef seasoning, stir well and marinate for 2 hours

4. Boil the udon noodles in a boiling pot for about 1 minute, remove and drain the water, add some olive oil and mix well to prevent sticking

5. Pour an appropriate amount of olive oil into the pan, put the beef into the pan and fry quickly, and remove the beef as soon as it becomes cooked.

6. Use the oil in the bottom of the pan to saute the onions, then add snow peas and carrots and stir fry for 1 minute

7. Pour the udon noodles and stir-fry evenly, add curry paste, lemongrass sauce and light soy sauce and stir-fry the udon noodles well

8. Add coconut milk and mix all ingredients well

9. Pour in the beef that has been fried in advance, stir and fry the beef and noodles

10. Finally add 1g of salt to taste
