Stir-fried Vermicelli with Vegetables and Fungus
1.
Soak the vermicelli in cold water to soften. Soaked vermicelli is suitable for cold water. When fried in this way, the taste is crispy and not easy to become too soft and sticky.
2.
After soaking the black fungus, you can rub it a few times with a little salt, and then wash it off with water. The black fungus treated in this way is cleaner. Blanch the black fungus in a pot of boiling water for a while.
3.
You can soak the small vegetables you bought in rice water to remove pesticide residues. Add a little refined salt water to remove small bugs and easy to clean.
4.
Add oil to the pot and fry the black fungus a few times over low heat. The black fungus will ring when it is single-fried, and it will also fry. But it needs to be fried before it can be eaten, so blanching before frying is a good way.
5.
After the black fungus is simply fried, add green vegetables and soaked vermicelli, stir-fry a few times quickly, add salt and fry a few times to get out of the pot.
6.
You can add a little shredded red pepper or wolfberry before it is out of the pot. The red and green colors are eye-catching, or you can omit it.
7.
Refreshing side dishes.
Tips:
Black fungus should not be soaked too long, and eat as soon as possible after soaking.
