Strawberry Kiwi Mousse Cake

Wash the strawberries and remove them for use

Peel the kiwi fruit and set aside.

Cut the kiwi fruit into small pieces

Use a food processor to puree the fruit, about 1 minute.

Transfer the puree to a hot water bath and add 30 grams of soft sugar.

Continue to add 10 grams of gelatin powder.

Stir until the sugar and gelatin powder are completely dissolved, then remove the puree from the hot water.

Weigh another 25 grams of caster sugar.

Add the caster sugar to 200 grams of whipped cream.

Prepare two slices of cake.

Tips:
When placing the surrounding strawberries, try to press the strawberries on their sides and do not leave them empty, so that when pouring the mousse, the mousse will not slip into the gap and affect the appearance of the finished product.
