Sugar Mocha Cookies

Biscuits: 1 teaspoon of instant coffee powder, 1/6 teaspoon of water, 33 grams of butter, 30 grams of caster sugar, 34 grams of low-gluten flour, 16 grams of corn starch, 1/6 teaspoon of baking soda, 1/3 small of cocoa powder Spoon

Stir the coffee powder with water to form a paste. Soften the butter and add in caster sugar and beat evenly. Add coffee paste

Continue to beat it into an even paste. Sift low-gluten flour, corn starch, baking soda, and cocoa powder into the butter paste and mix into a uniform dough. Knead into 8 g/piece balls and place on the baking tray

Flatten, dip in some water, sprinkle with sugar, put it in the oven, in the middle, heat up and down 160 degrees, bake for 25 minutes, turn off the heat, continue to simmer for 10 minutes, out of the oven
Tips:
1. The coffee powder in the second step does not need to be completely melted;
2. When mixing the batter, mix well in irregular directions. So as to prevent the dough from vigorously.
