Summer Nourishing Soup---clam and Loofah Soup

Wash the clams and soak them in salt water for two hours to spit out the sand and wash them.

Peel the loofah and cut into pieces with a hob, and cut the tofu into pieces for later use.

Add clean water to the pot, put ginger slices, cooking wine, add blanching water, and immediately remove the clams.

Heat a proper amount of oil in a pot on the fire, and sauté the ginger slices.

Put in the loofah pieces and quickly stir and fry them over the fire, and serve them out.

Leave the bottom oil in the pot, add clams and stock, and bring to a boil.

Transfer to a casserole, add tofu and simmer for 10 minutes.
8.
Season with a little salt, pour in the loofah and simmer for 5 minutes.
Tips:
Shellfish such as clams are rich in umami, so there is no need to add MSG when cooking, and less salt is used to avoid losing the umami taste.
