Cut fresh ginger and rinse with cold water.

Cut thin slices with a kitchen knife, spread salt and mix well, and let it stand for a while.

Put 800 ml of water in a pot and boil, add ginger and cook for 2 minutes, remove the water, and let cool.

Put it in a container.

Put the vinegar and sugar into a pot, heat and mix, cook for 3 minutes and pour into the ginger container. (The ginger immediately turns pale pink.)

After the ginger is cool, cover it and store it in the refrigerator for one day before consumption.
