Sweet and Sour Antarctic Fish
1.
Remove the scales and internal organs of Antarctic fish, wash, add salt and cooking wine and marinate for about 15 minutes
2.
Finely chop shallots
3.
Chop the ginger and garlic into puree and set aside
4.
Put the marinated Antarctic fish in a hot oil pan and fry on a low fire (the pan should be heated while pouring the oil to avoid sticking to the pan)
5.
Fry until the surface of the fish is golden and crispy, serve, drain the oil and warm it to a plate
6.
Add a bowl of sauce: 2 spoons of light soy sauce, 1 spoon of dark soy sauce, 1 spoon of vinegar, 1 spoon of sugar, 1 spoon of pepper
7.
Put a small amount of oil in the pan, fry the minced ginger and garlic, turn off the heat and pour in the seasoning sauce. After heating, pour directly on the fish and sprinkle with chopped green onions.
Tips:
1. Put the hot oil in the hot pan when frying the fish to prevent sticking to the pan and ensure the integrity of the fish;
2. The fish itself has been marinated and tastes good, so you don't need to add salt in the sauce. Of course, you can add some salt if you like heavy taste;
3. Adding tomato sauce not only enhances the flavor but also makes the sauce more attractive.
