My mother-in-law loves to eat fish. After taking her, she recently made fish for her at least three times a week. There are many ways of steaming and stewing, so I want to give it a different taste so that she can have more flavor. Today I bought a wild black fish with few spines, so I used it to make a sweet and sour fish. My mother-in-law said it was delicious, and I ate a lot of miles."

Sweet and Sour Black Fish

1. Remove the bones from the black fish, take two pieces of meat down

2. Cut the fish into cubes, add salt, pepper, and appropriate amount of rice wine, mix and marinate for 5 minutes

3. Put the marinated diced fish in a fresh-keeping bag, add dry starch, and shake the bag tightly to cover it evenly with dry starch. This method is simple and evenly dipped in powder.

4. The oil is 70% hot, and quickly fry it in the pan until the surface is golden. It is best to fry it twice until it is golden, so that the outside is charred and the inside is tender, with little water loss.

5. The fried diced fish are set aside.

6. Put a small amount of oil in the pan and fry the chives and ginger, then add sugar

7. Add zhe vinegar. I like to use this vinegar for sweet and sour dishes. It has a bit of fruity flavor and it tastes good.

8. Add some tomato sauce and fry until red

9. Add a small amount of water and starch to thicken

10. Pour in the fried diced fish

11. Stir fry so that the sweet and sour sauce is wrapped on the diced fish and it can be out of the pot.

Tips:

The oil temperature of fried fish should be higher, so that it can quickly lock the moisture of the fish, and it will be tender on the outside and inside.
