Sweet and Sour Hairtail

Wash the octopus, remove the head and tail and cut into sections, cut the red pepper and green onion into sections, smash the ginger and garlic into pieces

Marinate the hairtail with salt, cooking wine, and oyster sauce for 20 minutes

Put oil in the pan, fry the octopus until golden on both sides, lift the pan and place it on a plate

Leave the bottom oil in the pot, saute the red pepper, ginger, shallot and garlic, add the fried fish

Add light soy sauce, sugar, vinegar, add appropriate amount of water, bring to a boil, turn to medium heat and simmer

When the soup is almost dry, add cornstarch, heat up the juice, add chicken essence, and sprinkle with chopped green onion.
Tips:
1. The octopus marinated for a while in advance can make the octopus more tasty.
2. Use low heat when frying octopus, so that it won't stick to the pan.
3. The heat must be controlled when collecting the juice, and the heat should not be too high, otherwise it will be easy to stick to the pot.
