Sweet and Sour Hairtail

The hairtail is cleaned

Sprinkle some dry starch and stir evenly

Heat the pot, coat the pot with ginger, anti-sticking treatment

Add oil to the pot, 80% hot

Fish

Fried golden on both sides

Hold out

Pour off the oil for frying fish, add clean oil, add green onion, ginger and garlic, and stir the aniseed on medium heat.

Turn to high heat, add soy sauce, rice wine to saute, add appropriate amount of water to boil

Add sugar, rice vinegar, salt, pepper and fish, cover and simmer for 15 minutes, medium heat

Tips:
Do not add too much starch when frying the fish, otherwise the fish will become sticky.
