Sweet and Sour Hairtail

Remove the viscera, wash and cut into sections, dry the water for later use, pour an appropriate amount of oil into the pot, add the octopus to the pan and fry slowly after the oil is hot.

Fry the fish with ginger slices during frying.

Fry until golden brown on both sides, then add cooking wine, vinegar, light soy sauce, sugar, and salt.

Simmer until the soup thickens.

Finally, the delicious sweet and sour octopus is ready, and the meal is served.
Tips:
If you have white sesame seeds and shallots at home, you can sprinkle them at the end! I omitted it if I didn't have it!
