Sweet and Sour Hairtail

Clean the octopus, cut into sections, add salt, and marinate in cooking wine for 15 minutes.

One spoon of cooking wine, two spoons of soy sauce, three spoons of sugar, four spoons of vinegar, and five spoons of water are made into sweet and sour sauce.

The hairtail section is evenly patted with dried starch

Heat oil in the pot, put in the hairtail section

Fry on one side until golden brown and turn on the other side.

Fry both sides until golden brown.

Leave some oil in the pot, add sliced green onion, ginger, pepper, star anise, chopped pepper and stir fry for a spicy taste.

Tips:
The octopus is fried in sections to save fuel. If the sweet and sour sauce is not enough to cover the hairtail, you can add more water.
