Sweet and Sour is Me-pineapple Jam

Peel the pineapple and cut into small cubes, add an appropriate amount of cold water, add salt and soak for 20 minutes.

Peel the winter melon, remove the flesh and cut into small cubes.

Put the winter melon and pineapple in the pot, it is best not to use an iron pot! Add white granulated sugar and rock sugar.

Add water until the diced fruit is submerged.

After the high heat is boiled, turn to medium and low heat and simmer for about half an hour until the winter melon is soft and rotten.

Take a large portion of the diced fruit, about four-fifths of it can be put into the food processor and beaten into puree.

Pour the pureed fruit back into the pot, continue to heat it on a low heat, stirring halfway continuously to evaporate the water.
8.
Until the water in the fruit puree is completely volatilized and becomes a relatively dry mass, the work can be finished.
Tips:
1. It is best not to use an iron pan, otherwise the jam will turn black.
2. During the frying process, the fire should not be too high, otherwise the pan will become sticky.
