Sweet and Sour Squirrel Fish

Remove one silver carp and wash it.

Slice open and remove the fish bones.

Hit a cross knife.

Cooking wine, light soy sauce, and marinating for ten minutes.

Coat evenly with flour.

Fry into the frying pan until golden brown.

Prepare peas, green onion, ginger, garlic, diced shiitake mushrooms, tomato sauce, sweet chili sauce, sugar, white vinegar, starch and water to make the juice for later use.

Reserve the base oil, sauté the green onion, ginger and garlic, add the diced mushrooms and peas and stir fry.

Pour in the adjusted juice and boil it to a suitable consistency.

Pour evenly on the fried fish.
