Sweet Potato and Red Bean Soup

First boil the red bean soup, soak the red beans in advance until they are fully expanded; then boil and pour out the water; replace with new water, add red dates, ginger slices and orange peel and cook until the red beans are soft and crispy; then add brown sugar and cook Just 5 minutes.
Note: If you like special sand, you should keep cooking and boil big flowers. For example, the effect is better with a pressure cooker; if you like full and soft grains, add less water, cook for a while, simmer for a while, repeat several times.

The sweet potato is peeled and cut into pieces with a hob (large heated area, easy to be cooked through), and steamed in a pot until it can be easily pierced (water boiling time, about 15 minutes of steaming).

Press the sweet potato into a puree while it is hot (I weighed it about 280 grams), add about 20 grams of sugar, and mix well.

Then add about 200 grams of tapioca flour.

Knead into a slightly firm dough.
If the amount of cassava flour is large, Q is used; if the amount of cassava flour is small, the sweet potato has a strong flavor and is relatively soft. No matter how hard and how soft, you will have experience after doing it a few times, and you will know what you like.

Arrange the dough into rectangles and cut into small squares with a board.

You can knead the dough into a long strip, rub it gently, and then cut it into cylinders.
Note: If you can directly roll into long strips without loosening, the boiled balls will be too soft.

If you want to pursue perfection, use less cornstarch and smooth the corners.

If you make too much at one time and can't finish eating, just spread it out, put it in a bag after freezing it, and store it in the freezer.
There is no need to defrost when eating, just put it in a boiling pot and cook.

Bring the water in the pot to a boil, add the balls, cook for a few minutes and then they will float, continue to boil for 1-2 minutes and then increase the hair a little.

Drain it into cold boiling water and let it chill for 1-2 minutes.
