Sweet Potato Meatballs

Cut sweet potatoes into small pieces and steam them (I usually steam them on medium heat for about 15 minutes).

Peel the steamed sweet potatoes, put them in a large bowl and crush them into puree with a spoon.

Add flour, the ratio of sweet potato to flour is about 2:1, and then add a little sugar.

Stir the sweet potato, flour and sugar evenly.

Then wear disposable gloves to make sweet potato balls the size of glutinous rice balls.

Add vegetable oil to the pot, and when the oil temperature is 6~70% hot, add the sweet potato balls and fry them slowly until the balls are golden brown and ripe.

Tips:
1. The ratio of sweet potatoes and flour is generally not too fixed. I always have more sweet potatoes, in the form of 2:1 or 3:1.
2. When rubbing into sweet potato balls, it will stick to your hands. If you don't wear gloves, you can put a little oil on your hands.
3. When frying, the temperature of the oil should not be too high. Avoid frying. Try it with chopsticks. There will be small bubbles around the chopsticks and you can put the balls.
