Sweet Potato Rice Cake

The sweet potatoes are cleaned and steamed in a pot.

Let it dry for a while and peel it, then put it in a fresh-keeping bag and use a rolling pin to crush it into a puree.

Add mashed sweet potatoes, leftover rice, flour, and sugar to a large bowl.

Stir evenly into a slightly soft dough.

This dough is very sticky, so you need to dip more dry flour during operation. Group into a uniform spherical shape.

Use a heart-shaped mold to extrude the shape. Just press it into a round cake without a mold.

Heat a pan, add a little vegetable oil, add the sweet potato cakes, and fry until both sides are golden and ripe.

Tips:
1. My dough is too soft and sticky during operation. It would be better if you have disposable gloves and wear gloves. I just run out of it at home, so you can use more dry flour or smear some vegetable oil on your hands.
2. If there is no leftover rice, it will be delicious without adding it.
