Sweet Rice Noodles

Take 500 grams of glutinous rice and wash until the water is clear, soak for six to eight hours to make the glutinous rice fully absorb water. The glutinous rice can be crushed with fingers for preparation.

Put clean gauze on the steamer and steam the soaked glutinous rice in water

Prepare sweet koji, 2-2.5 grams. Soak in boiling water to dissolve and set aside

Steam the glutinous rice for half an hour, and wait until the glutinous rice is crystal clear. If the glutinous rice is very dry during the steaming process, you can sprinkle some water on the glutinous rice.

Put the glutinous rice in a water-free and oil-free pot and stir until the temperature of the glutinous rice drops below 40. Basically, it is warm when touched by hand. Pour the sweet koji and stir evenly with dry and clean hands.

Compact the glutinous rice and dig a small hole in the middle to facilitate the observation of the wine.

Put the lid on and wait for fermentation. If it is a sealed jar, just cover it. It is not a sealed jar, you can wrap a layer with plastic wrap, and then wrap a layer with gauze or cloth

After 24 hours, check the wine, add some cold water, stir evenly and compact with a clean spoon.

Repack it and open it in twelve hours. carry out
